Ingredients
4 servings
1 containerbutternut squash spirals
1 lbmild italian sausage
1 containerPrego
Chunky Garden or favorite type
1 Tbspgarlic
minced
2 Tbspcapers
2 Tbspolive oil
ยฝ cupartichoke hearts
grilled
8 cupsspinach
1 cupcherry tomatoes
halved
Instructions
Step 1
Brown italian sausage and set aside
Step 2
in 1 tbsp of oil on mid-high heat, brown the butternut squash spirals and set aside (~7 mins)
Step 3
in 1 tbsp of oil on mid-high heat, cook garlic until fragrant. (~1 min)
Step 4
Add tomatoes and cook until skin begins to wilt (~10 mins)
Step 5
Add capers and artichoke hearts until warmed
Step 6
Add spinach to the pot and stir until fully wilted
Step 7
Add cooked italian sausage and prego sauce and cook until full warm. You may need to reduce heat to avoid burning.
