Ingredients

For the Chicken
125gchicken breasts
2 cupsbutton mushrooms
sliced
⅔ cupdry marsala wine
salt
to taste
black pepper
to taste
⅓ cupheavy cream
¼ tspxanthan gum
1 Tbspolive oil
for greasing or cooking
For Serving
Instructions
Step 1
Grease bottom of the slow cooker with oil and place chicken on top.
Step 2
Next, cover chicken with mushrooms and season with salt and pepper. Pour wine over everything.
Step 3
Place lid on your slow cooker and set to cook for 3-4 hours on high.
Step 4
When chicken is done, remove chicken and mushrooms.
Step 5
Add whipping cream and xanthan gum to the crock pot and whisk to combine with juices.
Step 6
Return chicken and mushrooms to crock pot. Return lid, and cook an additional 20-30 minutes.
Step 7
Toss the spinach with oil and vinegar. Season with salt and pepper and serve with chicken and sauce.
To prepare on the stovetop:
Step 8
Heat oil in a skillet over medium-high heat.
Step 9
Season chicken on both sides with salt and pepper. Cook chicken about 5 minutes on each side, or until fully cooked.
Step 10
Add more oil, if necessary and saute mushrooms for 5-10 minutes, until tender.
Step 11
Stir in the wine, whipping cream, and xanthan gum. Season with salt and pepper. Stir and simmer until slightly reduced and thickened.
Step 12
Return chicken to skillet and spoon sauce over the top.
Step 13
Serve with a salad dressed in oil, vinegar, salt, and pepper.
