Instructions
Step 1
Spray baking dish with olive oil and pour 1/4 c red enchilada sauce in bottom.
Butterfly chicken
Mis dry spices together and rub on both sides of chicken
Mix tomatoes, parsley, onion and spinach and divide evenly between 3 butterfly chicken and add 1/4 of the cheese on top, roll the breasts.
Put stuffed rolled breasts seam side down in baking dish
Pour 1/2 c red enchilada sauce on top
Put remaining cheese on top
Cover with foil
Bake in 375F oven 30 minutes
May put on top of cooked diced cauliflower
