Eliana’s Favorite Mexican Chicken

This is a favorite recipe of my daughter’s, Eliana. Growing up, it was a favorite of mine, as well. It’s quick and easy as well as a nice alternative to traditional comfort food. Plus, it uses pantry staples that you likely already have on hand. Serve with a Mexican salad for a complete meal.

Step 1
Preheat oven to 350 degrees.
Step 2
In a saucepan, mix the first 5 ingredients and heat through.

In a 13x9 dish, place the crushed tortilla chips on the bottom. Then add chicken, followed by cheese and the sauce mixture on top.

Bake for one hour. Allow to cool 5 minutes before serving and enjoy!
