Instructions

Step 1
in a large stainless steel sauce pan or 2 stainless or cast iron skillets melt butter in saute pan over medium heat until foaming subsides.

break up onions as adding to butter. cook, stirring occasionally, until softened, about 8 minutes.

Lower heat to medium-low and cook, stirring frequently, until onions are very sweet and a rich golden-brown color, 1 to 2 hours. If browned onion juices on bottom of pot threaten to burn, add 1 tablespoon (15ml) water, scrape up browned bits, and continue cooking; add water whenever needed to prevent burning

Season with salt and pepper.

QUICK COOKING

place onions in a 12 inch non stick skillet

add vegetable oil and salt. Pour the water over salt & oil

Turn heat to high and bring water to a boil. Cover and cook until most of water is evaporated, about 10 mintues

Remove lid. Press onions up sides and into bottom of skillet. let sit untouched 30 seconds

Stir, scrape up any fond and press into sides and leave untouched for 30 seconds. Repeat until brown, soft and slightly sticky. About 15-20 mintues

Meanwhile, stir together baking soda and 1 tbsp water. When onions brown, pour baking soda & water over onions and stir until water evaporates. When water gone, onions are done

MAKE GRILLED CHEESE

lay out bread. spread a small layer of dijon and lay cheee slices over it.
Step 12
Place a few spoonful of carmelized onions on bread. Sprea a goodly amount of dijon on remaining bread slice, then place on onions.
Step 13
Pressslightly on bread to pack down onions. Cover outside of upward facing bread slice with butter. Place butter side down in skillet over medium low heat (not on high heat burner)
Step 14
While sandwich toast, butter top facing slice of bread. Keeping an eye on bottom bread so it doesn't burn. I oftern rotate slice clockwise to have even browning.
Step 15
When browned, flip sandwich so newly buttered slice is down. Adjust heat as needed. rotate as needed. After done, remove from heat. Slice diagonally.
