Ingredients
6 servings
2sweet potatoes
large, peeled and chopped into 1-inch cubes
1can black beans
drained and rinsed
1red pepper
chopped
1yellow onion
chopped
3cloves of garlic
minced
2 tablespoonsolive oil
1 teaspooncumin
1 teaspoonchilli powder
½ teaspoonsmoked paprika
¼ teaspooncayenne pepper
optional
salt
to taste
pepper
to taste
50gcheddar cheese
grated, optional
coriander
Chopped, for garnish, optional
Instructions
Step 1
Preheat the oven to 375°F/190°C.
Step 2
In a large bowl, toss the sweet potatoes, red pepper, onion, garlic, olive oil, cumin, chilli powder, smoked paprika, cayenne pepper (if using), salt, and pepper together until well coated.
Step 3
Transfer the mixture to a 9x13 inch baking dish and spread it out into an even layer.
Step 4
Bake for 30 minutes, stirring once halfway through.
Step 5
Remove the baking dish from the oven and add the black beans on top of the sweet potato mixture. If using, sprinkle the grated cheese over the top.
Step 6
Return the dish to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly and the sweet potatoes are tender.
Step 7
Garnish with chopped coriander, if desired, and serve hot.
