Instructions
Step 1
Boil 1 l of water
Step 2
Wash vegetables, peel and cut pumpkin and zucchini into cubes, finely chop carrots and celery, cut leek into circles
Step 3
Use a medium sized stewpot, add 1 tbsp of olive oil, heat, then add vegetables and stew for 5 minutes under lid
Step 4
Add 1/4 teaspoon of dried thyme, rosemary and mint, salt and pepper to taste
Step 5
Add 600-1000 ml hot water and cook for 15-20 minutes
Step 6
Blend thoroughly
Step 7
Serve with garlic croutons
