Delicious home-made pumpkin soup for warming Autumn evening meals. Top with grated cheese and serve with fresh crusty bread.
You can either buy a whole pumpkin and roast it before making the soup, or use pre-packaged chunks of pumpkin.

Instructions
Step 1
Sauté the chopped onion in a small amount of water in a large pan.
Step 2
Add the carrots, chopped pumpkin, ginger and seasoning.
Step 3
Add more water.
Step 4
Cook on the stove top for about 30 minutes until the vegetables are tender. Add more water if necessary during cooking.
Step 5
Purée in a blender or with a hand mixer.
Step 6
Serve with fresh crusty bread. For an added touch, grate some cheddar cheese on top.
