Instructions
Step 1
Preheat oven to 350F.
Step 2
Place parchment paper in bottom of glass baking dish.
Step 3
Remove stem and seeds from each pepper.
Step 4
Place peppers in baking dish and bake for 10 minutes. Set aside.
Step 5
Place oil in large skillet over medium heat; swirl to coat bottom.
Step 6
Add onion and cook until translucent, 2-3 minutes.
Step 7
Add garlic and continue to cook for 1 minute.
Step 8
Add spinach and cook for 1 minute, stirring.
Step 9
Add ground beef and cook 2-3 minutes, breaking into very small pieces.
Step 10
Stir in tomato paste, cumin, chili powder, salt and pepper.
Step 11
Cook until the meat is browned, 7-9 minutes.
Step 12
Stir in sweet potatoes.
Step 13
Divide the meat mixture evenly amongst the 4 peppers. Return to oven and bake for 10 minutes, until peppers look wrinkly.
