Step 1
Heat oil in skillet over M-H
Step 2
Add onions, peppers, salt and pepper
Step 3
Reduce heat to M-L , stir until onions tender, about 15 minutes. Add a few tablespoons of water if necessary.
Step 4
Add balsamic vinegar and thyme and turn heat to low
Step 5
Taste and adjust seasonings.
