Instructions
Step 1
Smash and slice mild-spicy hatch green chili into 4-5 inches long pieces (you may use spicy hatch green chili if you like), transfer to a plate, set aside.
Step 2
Prepare and dice garlic, slice red Thai chilies ( red chilies are optional, but it adds more heat and a nice color to the presentation), set aside.
Step 3
In a heated wok or grill pan, add in 1.5tbs of cooking oil to warm up. Throw in sliced hatch green chilies to Sautee on medium heat for about 10 minutes until they are nicely charred and soft. Remove from the heat.
Step 4
To create the sauce, in a clean wok or grill pan, heat up 1.5tbs of cooking oil, further add in diced garlic and red chilies to mix until aromatic. Further add in black bean paste, light soy sauce and dark vinegar to mix on medium heat for under a minute.
Step 5
Now add in charred hatch green chilies, make sure chilies are coasted well with the sauce. To cut down the saltness and heat, season with sugar and chicken powder, toss to mix, it’s ready to serve. It’s perfect to pair this dish with rice.
