Step 1
In a food processor, combine basil leaves and salt and process while adding olive oil in a steady stream until a paste forms. Add garlic, toasted and cooled pine nuts and cheese and process to desired level of creaminess. Keep scraping the sides of the food processor as you go along. Use on top of boiled and drained pasta. The pesto doesn’t heat up well, it will separate. To store, add to an airtight container, smooth surface and pour olive oil on top to cover. Close container. Can also be frozen. Thaw on counter or in fridge.
