This recipe is based on the KetoTwins video. You don't have to be too exact with the ingredient quantities. Mozzarella is pretty bland so it's a good choice for a wide variety of toppings or fillings. Try other semi-firm cheeses like cheddar, or whatever spices you like to the batter to change things up!

Instructions
Step 1
Whisk lupin flour and xanthan gum together, then toss in shredded mozzarella until well mixed.
Step 2
Dribble egg whites into the cheese mixture, mixing with a fork until everything is evenly distributed.
Step 3
Drop by approximately 1/4 cup (ice cream scoop) into each mini waffle area (or appropriate size for your wafflemaker).

Step 4
Check doneness no earlier than 4 minutes. Cook for at approximately 6 minutes, until waffles are brown and crispy. Lift out with a chopstick and let cool on a rack.
