Step 1
Pre heat your oven to 180c. Finely chop the onion and cook it gently with a little butter and a pinch of salt until tender.

Add the onion to the sausage meat, cheddar, bread crumbs, oregano.

Squish together and chill in the fridge.
Step 4
Once the sausage mix has chilled roll into a thick sausage shape with roughly the diameter of golf ball, place on the pasty making sure everything is the same length. Brush the last inch or so of pasty with milk and roll up, pop in the fridge to chill.

Slice the roll into 8, I use a wed knife , bush with a little milk and sprinkle over a little sea salt flakes

5- Bake in an oven set to 180c for 40min.
