Step 1
-Mash ripe bananas and set aside -Mix sugar, oil and eggs well
-Add the mashed bananas & mix
-Add flour, baking soda, salt & cinnamon. Mix till just combined. Do not over mix
- lightly mix or stir in lemon zest
-Fill 12 muffin cups 3/4ths of the way
-Optional * place a thin slice of banana on top of muffin - Bake in a preheated over at 375 degrees for 15 to 17 mins till toothpick comes out clean - Let them cool down
In the meantime make the topping - Melt the butter - In a separate bowl mix sugar & cinnamon - spread melted butter on top of the muffins & then dip in sugar cinnamon mixture
