Sweet Potato Casserole (Instant Pot)

This can be made in the Instant Pot, on the stove, or in the oven. This recipe leaves out the sugary topping making it like a souffle.

Instructions

Step 1
Heat potatoes in pan on stove or microwave
Step 2
Instant Pot Saute: Melt the butter. Once the butter melts, stir in the brown sugar, maple syrup, vanilla, cinnamon, and salt and simmer for 2 minutes, until melted.
Step 3
Mash the potatoes. Wisk/stir in the egg and milk (or heavy cream).
Step 4
Add the potato mixture to the pan. Slow cook on low for 30 minutes (or cook on stove on low or in oven on 350).
Step 5
For best results, let set for at least 10 minutes after cooking/baking.
