Instant Pot Honey Garlic Chicken

Instructions

Step 1
In a small mixing bowl combine honey, minced garlic, soy sauce, ketchup, oregano, parsley, sriracha; mix until well combined and set aside.
Step 2
Heat the Instant Pot in sauté mode. Add sesame oil to the pot. Season chicken thighs with salt and pepper; arrange in the instant pot and cook for about 2 to 3 minutes per side. Do two batches if necessary of searing, then once they are all seared pile them into the instant pot as long as it's not past the maximum fill level.
Step 3
Once searing is almost done, starting cooking rice. Your rice cooking instructions may vary depending on the type of rice used. Cook 1 cup white rice with 2 cups water and some salt. Bring to a boil, immediately turn heat to low, cover, and cook very low for 15 minutes or until water is absorbed.
Step 4
Add the prepared honey garlic sauce to the pot; cover and lock the lid. Cook on manual for 13 minutes. Natural release for 5 minutes before venting.
Step 5
Remove chicken. Turn Instant Pot to saute medium, and add cornstarch slurry (1 tbsp cornstarch to 2 tbsp water mixed). Cook two minutes until thickened slightly.
Step 6
Place rice on plate, add chicken thigh, and spoon sauce on top. Top with cilantro, green onion, toasted sesame seeds, sriracha, and avocado (optional). Add two orange slices to place. Squeeze juice over chicken and rice before eating.
