Chinese Braised Pork Belly (Dong Po Rou) In the Instant Pot,

Tender, succulent pork belly that melts in your mouth, bursting with umami flavour.
This dish is perfectly paired with jasmine rice -wholesome comfort food.
I had some pork belly on hand and other than just roasting it which I usually do, I opted to try this dish out using my Instant Pot.
Not only did it turn out pretty amazing, it really is super simple with little effort required once you get it cooking.
I've modified the recipe I followed slightly, and while I really enjoyed it, I'll definitely be adding in some chilies next time for a bit of heat.

Instructions
Pork Prep
Step 1
Bring a pot filled with enough water to fully submerge pork to boil. Add in ginger and pork belly. Cook for 10-15 minutes. NOTE: Properly prepare the belly before submerging, removing hair and gristle from skin. Skim off any scum that forms while boiling.
Step 2
Remove pork from water, allow to cool slightly. Cut belly into large cubes (1.5.2" in diameter) Wrap each cube into a 'package', which allows the meat to stay in shape while braising.
Step 3
Bring Skillet to high heat, and sear each cube side except the skin. Set aside.
Instant Pot Prep & Cooking
Step 4
Slice leek stalk or Green Onions into large strips and lay at base of IP. Add in 1/2 sliced ginger.
Step 5
Layer Pork Cubes skin side down, leaving as much space among them as possible.
Step 6
Add rest of ginger, garlic, & additional aromatics. Add wine, soy sauce and rest of ingredients. Add just enough water to cover the pork cubes.
Step 7
Seal Instant Pot and set to pressure HIGH for 1 hour.
Step 8
After 1 hour, safely remove IP cover and set to Sautee Medium. Allow sauce to reduce to a thickened consistency, where it just coats the back of a spoon. This can take anywhere from 30 - 60 minutes, depending on the amount being made. Optionally, you can transfer this to the stovetop if you wish to save on power or reduce it faster.
Step 9
Remove cubes and Serve, ideally with jasmine rice.
