2 tablespoonsflat-leaf parsley
minced

1 tablespoondijon mustard

1 tablespoonprepared horseradish

2 tablespoonsunsalted butter

¼ cupred onion
minced

1garlic clove
large, minced

1 poundlump crabmeat
jumbo, picked clean and cartilage removed

salt
to taste

pepper
to taste

1egg
lightly beaten

1 cupdry bread crumbs
unseasoned

¼ cupvegetable oil

crème fraîche

scallions
chopped

caviar

smoked salmon
for garnish
Instructions
Step 1
In small bowl combine mayonnaise, parsley, mustard and horseradish,
Step 2
Heat butter in nonstick skillet over medium-high heat. Add onion and garlic; cook until softened, 2-3 minutes.
Step 3
In large bowl, combine crabmeat, mayonnaise mixture, garlic and onion. Season with salt and pepper; stir in egg.
Step 4
Place breadcrumbs in shallow pie place. Divide crab mixture into 10 patties. Coat with bread crumbs; place on baking sheet lined with waxed paper. Cover with plastic wrap; refrigerate 1 hour.
Step 5
Heat oil in non-stick skillet over medium-high heat. In batches, cook cakes until golden, 4-5 minutes, turning once.
Step 6
Place on serving plate and top with crème fraîche, scallions, caviar and a piece of smoked salmon.
