Vanilla Chocolate Chip Oatmeal Cookies

1 cupgluten free oats
dry instant

½ cupgluten free flour
1:1
0.5 scoopvanilla shakeology

1 ½ tspbaking powder

¼ tspfine sea salt

1egg

¼ cuplactose-free 2% milk
+ 1 tbsp

2 Tbspcoconut oil

1 tspvanilla extract

¼ cuppure maple syrup

¼ cupdairy free mini chocolate chips

¼ cupunsweetened shredded coconut flakes

2 Tbspchopped walnuts

Instructions
Step 1
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Step 2
In a medium bowl, mix together oats, flour, shakeology, baking powder, and salt.
Step 3
In a separate bowl, whisk together egg, lactaid, coconut oil, and vanilla.
Step 4
Pour wet mixture into dry mixture, stir until combined.
Step 5
Fold in chocolate chips, coconut flakes, and walnuts — stir until combined.
Step 6
Drop cookie dough by table spoon or small ice cream scooper onto baking sheet, flatten to desired thickness, and cook for 8 minutes.
Step 7
Let cool for 20 minutes and store in fridge.
Step 8
You can heat them up for a few seconds if you’d like to melt the chocolate chips before you eat them.
