Ingredients

For the Biscuits
300gall-purpose flour
14ggranulated sugar
12gfine sea salt
8gbaking powder
4gbaking soda
9ggarlic powder
4gonion powder
4gOld Bay Seasoning
optional
½ cupunsalted butter
Ice cold
1 cupsharp cheddar cheese
shredded
1 cupbuttermilk
cold
Buttermilk Egg Wash
Instructions
For the Dough
Step 1
Combine the flour, sugar, salt, baking powder, baking soda, garlic powder, onion powder, and optionally Old Bay seasoning. Whisk thoroughly until homogeneous.
Step 2
Cut the butter into half-inch, evenly sized cubes. Shred your cheese here, too.
Step 3
Add the flour and butter to a food processor, and pulse until the butter is evenly distributed in pea-sized clumps. Add the cheddar and pulse a little bit more until also combined.
Step 4
Pour the mixture into a bowl and slowly stream in the buttermilk while stirring. Once a dough comes together, dump out onto a well floured work surface and knead lightly until it comes together.
Step 5
Roll the dough into a rough rectangle, fold into 3rds, and roll lengthwise into a longer strip. Repeat this step once more. The dough should be a small, thick rectangle at this point. Wrap in plastic wrap and let sit in the fridge for 30 minutes, or up to overnight.
For the Egg Wash

Preheat oven to 425° F
Step 7
Mix the egg with the buttermilk in a bowl. Set asside.
For the biscuits

Line a baking sheet with parchment paper.
Step 9
Flour your works surface, dump out the dough, and flour the top of it. Roll out the dough into a large rectangle that's about 3/4 of an inch thick, and begin cutting out biscuits, with either a cutter or a knife. If making round biscuits, all the scrap dough can be re-rolled and cut, but the biscuits will look noticeably different. Square biscuits avoid this.
Step 10
Place your biscuits on the baking sheet, and brush them down lightly with the egg wash.
Step 11
Place in the oven and bake at 425° F for 13-15 minutes, or until golden brown.
