Peanut butter jam cups

Instructions

Step 1
Melt 2 tbsp coconut in the microwave then stir in peanut butter until fully combined.
Step 2
Distribute between 12 mini cupcake liners, using tray for stability (approx 2/3 tbsp ea) then place in the freezer for 5 - 10 minutes
Step 3
Place a small amount of jam in the centre of each cup spreading slightly without going right to the edges
Step 4
Melt chocolate and remaining coconut oil together then carefully spoon over jam making sure there is a seal between peanut butter base and chocolate to avoid jam oozing out.
Step 5
Refrigerator for 45mins and enjoy. 1 piece is one serve
