Instructions
Step 1
Preheat your air fryer: To ensure even cooking, preheat your air fryer to 300°F (148°C) for 5 minutes.
Step 2

Prepare the pound cake batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Step 3

Gradually add dry ingredients: In the same bowl, sift in the all-purpose flour, baking powder, and salt.

Step 4

Gradually mix in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. Mix until well combined and add diced peaches. Be careful not to overmix.

Step 5

Assemble the cobbler pound cake: Grease/Flour an air fryer-safe cake pan or a 7-inch springform pan. In a medium-sized bowl, toss together the diced peaches, butter, and brown sugar. Layer the peach filling on the bottom of the pan.

Step 6

Cook the peach cobbler pound cake: Pour the pound cake mixture over the peaches and place the pan in the preheated air fryer and cook at 300°F (148°C) for 1hr 40min - 2hrs, or until a toothpick inserted in the center comes out clean.
Step 7

Once the cake is done, remove it from the air fryer and let it cool for about 10 minutes. Carefully remove the cake from the pan and transfer it to a wire rack to cool completely. Slice, serve, and enjoy your air fryer peach cobbler pound cake with a dollop of whipped cream or a scoop of vanilla ice cream!
