Slice brioche bread(each one for 4 slices lengthwise), and transfer them to the baking tray, lined with parchment. Drizzle with olive oil and bake in a preheated oven at 190C for 7-8 minutes or until golden.

In a bowl combine raspberries, chopped pistachios and honey, mix well.
Step 3
Brush a small baking dish( slightly bigger than the size of Camembert cheese) with olive oil. Place Camembert cheese in the middle, make a cross-cut on top and arrange raspberry honey mixture around and on top of the cheese. Sprinkle with thyme leaves and bake in preheated oven at 190C for 12-15 minutes.
