Buttery Herb Pearl Couscous Stuffing

This year I decided to stuff the Turkey with an Herby couscous stuffing. It came out a bit soggy (as stuffing tends to get soggy inside the bird) but was absolutely delicious. You could make this stuffing recipe without stuffing the actual bird by using the ingredients listed below and cooking the couscous on top of a steamer 2-3 times until fully cooked.

Step 1
Heat butter in a large saucepan
Step 2
Add pearl couscous and coat well with the butter until it starts to brown
Step 3
Turn off the heat and add salt and herbs (optional to add salt as the turkey juices will be salty and will be added into the couscous as it cooks)

Mix well then add one cup of water
Step 5
Allow the water to absorb (about 5 minutes) and mix again
Step 6
Place couscous into the turkey cavity and cover the exposed area with a foil
Step 7
Place water or chicken broth (3-4 cups) at the bottom of the turkey baking pan for steaming (and to prevent burning the base of the baking dish
Step 8
Heat oven to 325°F and place turkey into the oven for 45 minutes
Step 9
Remove turkey at every 45 minute interval and baste the bottom liquid into the cavity and on top of the bird
Step 10
Once turkey is golden in color, cover the entire bird with foil and continue baking at 45 minute intervals until the internal temp of the turkey is 165°F
