Step 1
Preheat the oven to 325F and line a baking sheet with parchment paper or a silicon mat (this will make it much easier to remove the cookies from the pan). In a large bowl, beat together the sugar, almond paste, and salt using an electric mixer until a crumbly mixture forms. Add the lemon zest and vanilla extract and beat until combined.
Step 2
With the mixer on low speed, slowly pour in the lightly beaten eggs whites. You won’t use all of them, so go slowly and add them bit by bit until a smooth, scoopable paste forms. You don’t want the mixture to become thin or runny, so be careful and stop once you can scoop out some batter and it will still mostly hold its shape.
Step 3
Scoop out the batter by the tablespoon and place it on the baking sheet a few inches apart. The batter should spread some, so make sure to leave space. Bake for 20-25 minutes until the edges of the cookies are lightly browned, let cool a few minutes, then remove from the pan to cool completely.
