Italian Red Meat Sauce - Family Recipe

Ingredients
6 servings

4 Tbspextra virgin olive

4 clovesfresh garlic
minced

0.5onion
chopped

¼ cupfresh Italian parsley
finely chopped

1 x 28 ozcan tomato puree
large, like Cento, Contadina, or Redpack
1can of San Marzano Tomatoes
large, Roma or cherry tomatoes are great

1can of tomato paste
small

1 tspkosher salt
or sea

1 tsppepper

1 tsporegano

basil

3 leavesfresh basil
more to add to each plate, if necessary

Pecorino Romano
to grate on top
Instructions
Step 1
Pour the oil into a large sauce pan over medium high heat.
Step 2
Crush the garlic and add it to the oil (if you want a spicy sauce, you can add some hot pepper, fresh or flakes, at this point). Sauté the garlic until it just starts to brown, then add the parsley.
Step 3
Turn the heat up to high. Now, add the tomato puree and San Marzano tomatoes, and quickly cover with the lid for about 30 seconds, until the squirting subsides.
Step 4
Add tomato paste, spices and the Basil. Bring to a slight boil.
Step 5
Add cooked meat as desired – meatballs, Italian sausage, or country style pork spare ribs
Step 6
Simmer on very low heat for three hours stirring occasionally with a wooden spoon. If you want to keep it on longer, that’s OKAY!
Step 7
If acidic – add one teaspoon of sugar or baking soda. Keep adding if necessary.
Step 8
Serve over your favorite pasta – delicious!!
