Instructions

Step 1
Heat oil in sauté pan, then sear seasoned pork tenderloin on both sides until browned. Finish in the oven until fully cooked.
Step 2
For the sauce, sauté the diced shallot until soft. Then add red wine, cooking for 1-2 minutes.
Step 3
Once the alcohol has cooked off, add chicken stock and dried cranberries.
Step 4
Bring to a boil, then thicken with cornstarch slurry.
