Instant Pot Mashed Potatoes

Instructions

Step 1
Peel potatoes.
Step 2
Cut potatoes into halves or quarters, basically so the chunks are all about the same size.

Put potatoes in the instant pot and cover with about 6 cups of water, enough to be completely covered.
Step 4
Add half the salt
Step 5
Flip valve to SEALING. Cook on STEAM setting for 12 minutes.
Step 6
Make herb butter while potatoes are cooking.

Melt butter in large skillet.
Step 8
Add onion, herbs, and let it gently cook for 15 minutes.

Finishing

Step 9
Quick release remaining steam once potatoes are done.
Step 10
Drain potatoes. They should be very tender.
Step 11
Using a potato masher, mash the potatoes right in the instant pot
Step 12
Add the herb butter, cream cheese or sour cream, parmesan cheese, and the remaining half of the salt
Step 13
Stir to combine
Step 14
Serve!

These can be refrigerated.
