When I was expecting my first child I could not keep anything down. I always needed a piece of ginger around me or I would be sick. That was a rough time because I was always hungry. Once I found out getting ginger candy was hard to find or if I did find some it was not very tasty or very costly. I researched different recipes and took what I liked from each one to create Ann's Candied Ginger.

Instructions
Step 1
Line a baking sheet with parchment paper, Spray a cooling rack with Pam cooking spray and then place on the baking sheet and sit aside.
Step 2
Peel the ginger root and slice into chunks.
Step 3
In a medium saucepan pour in water and chunks of peeled ginger roots and place on a medium heat. Cover and cook for 30 minutes or until ginger is tender (soft) not mushy.
Step 4
Once ginger is tender drain in a colander but remember to reserve (set aside 1/2 cup of the cooking liquid.
Step 5
Put ginger and reserved water back in saucepan, also add sugar and honey. Turn stove top on high heat and stir ginger and sugar mixture then bring to a boil, Stir frequently. Turn down the heat to medium for about 20 minutes but don't forget to continue to stir frequently. Once you see sugar and honey mixture beginning to recrystallize.
Step 6
Turn off heat and move candied ginger to cooling rack and separate pieces before they begin to dry.
