Instructions
Step 1
Begin with peeling the potatoes and slicing thinly with either a sharp knife or use a mandoline (much easier).
Step 2
Leave the potatoes to soak in cold water whilst you prepare the rest of the ingredients.
Step 3
Finely chop the garlic and melt the butter in a small sauce pan.
Step 4
Add the butter to the cream, along with the garlic and stir well.
Step 5
Grate the cheese.
Step 6
Drain the potatoes and begin layering in a baking dish. Potatoes, cream, salt & pepper followed by fresh thyme. Repeat the process 4/5 times until you reach the top.
Step 7
Do not put cheese on the top later. Instead cover with tin foil and bake in a preheated oven at 180c/350f for 1 hour 10 minutes.
Step 8
Remove from the oven and take off the tin foil. Top with a generous amount of cheese and place back in the oven for another 20 minutes or until golden brown and crisp.
Step 9
Leave to rest for 15 - 20 minutes before serving.
