Step 1
Preheat your oven to 190°C/gas mark 5.
Step 2
Cook the sliced potatoes in a pan of boiling water for 10 minutes to soften.
Step 3
Season the diced chicken well, then fry in a splash of olive oil in a saucepan (or ovenproof dish) over a medium heat for about 5 minutes. When the chicken starts to brown, add the onion and bacon. When the bacon starts to crisp up, add the garlic and continue to fry for a minute. Next, add the flour and stir it in for a minute. Then, add the milk, little by little, stirring continuously, to create a sauce.
Step 4
When all the milk is added, throw in most of the grated cheese and stir it into the sauce. Remove from the heat, stir in the spinach and transfer the mixture to an ovenproof dish (if you were using a saucepan).
Step 5
Arrange the potato slices over the top and sprinke with the remaining cheese.
Step 6
Cook in the oven for 25 minutes, or until the potatoes are a nice golden brown.
