Ingredients
4 servings

200gquinoa
washed & drain
200gtin black eye peas
rinse & drained

600mlvegetable stock

50gwhite onion
peeled & diced

thyme
washed

1 clovegarlic
peeled & crushed

10mlvegetable oil

parsley
washed
Instructions
Step 1
In a medium saucepan add the oil and heat gently, then fry off the onions, garlic and gungo peas until the mix is quite dry. Ensure onions are a golden brown and not chard. Then set aside the gungo peas mixture.
Step 2
In a larger pan add the 600ml of stock and bring to a boil over a high heat, then add the quinoa. Stir and cover with a lid and reduce the heat to a low setting and allow to simmer for 20 minutes until all the liquid is absorbed. Remove from the heat and allow to stand for 10 minutes.
Step 3
Fluff up the grains with a fork and then gently fold in the gungo peas mixture and serve.
