Rack of Lamb Crowm can be an impressive centrepiece. Crown roast of lamb is all about presentation. This is so elegant way to present lamb chops to your guests. The racks themselves come from the loins that run either side of the lamb’s spine, with the rib bone attached. This tender oven roasted rack of lamb , seasoned with few herbs, olive oil, garlic & spices. The cooking time the less than regular rack of lamb. Serve with roast vegetables or rice.

Step 1
Take two racks of lamb. Here is 8 chops on each rack.
Step 2
First of all , remove the extra fat and marinate.
Step 3
Take few herbs, sage, rosemary, and thyme. Remove the leaves of thyme and rosemary and discard the stems.Remove the stems of sage. Finely chopped the herbs and add in a bowl.
Step 4
Add few other ingredients; olive oil, lemon juice, chilli flakes, salt, coriander powder, crushed black pepper, cumin powder, crushed garlic and mix all together.
Step 5
Rub the marinate all over both rack of lamb generously. Leave to marinate overnight or 6-8 hours. Cover with cling film and put in refrigerator for marination.
Step 6
Next day , take it out and tie to make a crown. Tie the last 2 bones of rack with kitchen twine.Stand racks upright, with fat sides touching and tie the two last bones together. Run the thread horizontally through the meat , form the circle by pulling ends. Place on bundt pan to secure the circle. This pan helps to hold the shape of crown.
Step 7
Preheat oven at 200c with rack in bottom third. Roast the crown in oven for an hour or until tender at 200c.
Step 8
Cover the top individual bones with cling film ,otherwise it will burn quickly.
Step 9
For Serving, remove foil wrap, and transfer to a platter, stuff with rice and enjoy.
