Instructions
Step 1
Dice the pears into small, 1/2 inch pieces. Chop the garlic.
Step 2
Start boiling the tortellini. Cook it according to the instructions on the package. Set aside when finished. Start toasting walnuts on 1 tick above low heat, stirring them every few minutes while making the sauce.
Step 3
Melt the butter over medium heat. Sautee the pears in the butter for 5 minutes. They should be softened. Then, add the garlic and cook for 1-2 more minutes.
Step 4
Add the flour and cook for ~5 minutes, stirring continuously, until the flour is a slightly dark gold.
Step 5
Add the milk and cream and stir. Turn the heat up to medium high. Once the mixture boils, turn the heat back to medium and add the goat cheese.
Step 6
Stir until fully incorporated, then add your tortellini and half of your lemon's juice. Add pepper and salt to taste. Taste to determine if you want more lemon (I prefer a whole lemon). Add your walnuts on top of each plate, per your preference. Enjoy!
