Ingredients

For the Wedges:
2sweet potatoes
large, peeled and cut into wedges
¼ cupolive oil
2 Tbscorn starch
or potato
1 Tbsbrown sugar
1 tspnchili powder
1 tspnginger
0.5 tspncoriander powder
0.5 tspncinnamon
0.5 tspnallspice
0.5 tspnblack pepper
2 tspnsalt
Forthe Dip:
¼ cupgreek yogurt
¼ cupmayonnaise
1jalapeno
diced small
1lemon
juice and zest of
0.5 tspngarlic powder
¼ cupgrated cotija
or quest fresco
2 Tbschives
chopped
To Finish:
Instructions
For the Wedges:
Step 1
-Set your oven to 400*F and line a baking sheet with parchment paper.
-In a large bowl, toss the sweet potato wedges with all the ingredients then neatly line them up on a baking tray leaving a bit of space between each wedge. Bake for about 10 minutes, then flip the wedges and bake another 10-15 minutes, or until they’re nicely browned and tender in the middle. -Allow to cool a bit before transferring to desired service plate.
For the Dip:
Step 2
-Mix all ingredients in a small bowl and reserve until ready to serve. the dip can be made a few days in advance to allow flavors to meld well.
-Transfer dip to desired service bowl right before serving.
To Finish:
Step 3
-Sprinkle the warm wedges with snipped chives and finish with a generous squeeze of lemon.
