CHICKEN AND LEMONGRASS POTSTICKERS WITH PONZU DIPPING SAUCE

Includes recipe for filling and for ponzu dipping sauce.

Instructions

Step 1
Make the Filling

In a mixing bowl mix the chicken with the cabbage, cilantro, lemongrass, chives, garlic, garlic, egg and salt. Set aside

Filling the Wonton Wrappers

Lightly flour a sheet pan, and set aside.
Step 5
Line up 4 wonton wrappers at a time, and make sure to cover the remaining so they do not dry out.
Step 6
Spoon out a Tablespoon of filling in the center of the wrappers. Brush the outside of the wrappers with water. Bring up the sides of the wrapper. Press and pleat the edges to seal in the filling. Lift the potsticker by the seam, and put on the floured sheet pan. Continue until all the filling is gone.

Cooking the Potsticker

In a large nonstick pan, heat about 2 Tablespoons of oil.
Step 9
Place the dumpling in the pan and let the bottoms brown for about 2 minutes.
Step 10
Add ½ cup of water to the pan, and cover. Cook until the water has evaporated.
Step 11
Remove the lid and cook for 1 more minute. Transfer to a serving platter.
Step 12
Continue to cook in batches until all potstickers have been cooked.

Ponzu Dipping sauce

Whisk tamari, mirin, lemon juice, sesame oil, ginger and lemon zest, in a shallow saucepan.
Step 15
Boil for 1 minute and then strain into a bowl and serve with the potstickers.
