Instructions
Step 1
Heat oil, add ½ cup onions and cook until caramelized (this will give a nice color to your stock) then add the rest of onions and cook over medium heat until translucent. Add thyme, bay leaf, pepper, stir into onions then add stock. Cook for 25 mns.
Step 2
Fill four crock style soup bowls with soup, place a piece of toast on top and cover with 2 oz of cheese.
Step 3
Place under broiler (use a small sheet pan) until cheese is browned.
