Marinade
3 Tbslime juice
1 tspsalt
2 tspblack pepper
1 Tbschili seasoning
1 tsppaprika
½ tspcumin
2cloves garlic

Instructions
Step 1
1) In a large bowl, combine shrimp and all marinade ingredients. Set aside.
Step 2
2) Prepare and chop all vegetables to be similar in size. Set aside.
Step 3
3) In a large nonstick pan, cook all vegetables together in a little water over medium-high heat until tender and golden in color. Set aside in a bowl.
Step 4
4) In the same pan, sauté the marinated shrimp for about 6-8 mins, stirring often until fully cooked.
Step 5
5) Return the cooked vegetables to the pan with the shrimp and cook for an additional 1-2 mins.
Step 6
6) Serve with fresh chopped parsley for garnish and approved fruit side.
