Instructions
Step 1
Bring the roast to room temperature. Whipe dry
Step 2
Massage in the olive oil
Step 3
Season all sides liberally with both spices
Step 4
Let stand for 10 minutes
Cooking
Step 5
Heat the grill to 450. Using indirect heat, place the roast in fat side up and cook for 15 minutes.
Step 6
Lower the grill temp to 325 and cook for 1 hr 45 minutes. Check every 30. Use an instant read meat thermometer for a temp of 120-125 for rare/medium rare. Remove and let rest before carving.
