Step 1
Preheat oven to 180°C (160°C fan) mark 4. Beat the eggs and sugar in a large bowl using a handheld electric whisk until very thick, about 5min. Sift over the flour and cocoa powder, add the ground almonds and carefully fold together using a large metal spoon.
Step 2
Scrape into a round ovenproof pie or serving dish, about 20.5cm across, and arrange the pears on top. Scatter over the flaked almonds and bake for 15min, until just set. Allow to sit for a few min, then lightly dust with icing sugar and serve.
