Sometimes the simple dishes are the most delicious . This is creamy fluffy and it has less saturated fat than butter ! It is also gluten free hut check the Mayo you add to be sure it doesn’t have malt vinegar .

Instructions
Step 1
Peel the potatoes then boil or steam until fork tender . Drain then put in a large bowl or pot for mashing
Step 2
Mash the potatoes or use a ricer then add salt pepper nutmeg and mayo and once combined use a whisk to make the potatoes nice and fluffy and airy
Step 3
Thinly slice the chives then fold into the mash and its ready to eat. To serve sprinkle more chives on top also its nice to grate some Parmesan
