Instructions
Step 1
Preheat grill 350 F.
Step 2
Rub oil over the surface and season.
Step 3
Open sear plate and sear each side until a dark crust forms.
Step 4
Turn the temp down to 250 F.
Step 5
Smoke until 130 F internal. About 3 hours. Let the meat rest about 20-30 minutes before slicing.
Step 6
Slices as thin as possible.
