Upside-down carmilised chocolate orange brownies

Instructions

Step 1
Preheat the oven to 170?C. Line a 20 x 20cm baking tin withbaking parchment.
Step 2
Finely zest the orange and leave the zest to one side.
Step 3
Prepare the rest of the orange by trimming the white skin off and cutting it horizontally into circles. Place these orange slices on the base of your lined baking tin.
Step 4
Put the sugar in a clean, heavy-bottomed, medium saucepan and place on a medium to high heat. Stir the sugar with a wooden spoon or heat-resistant spatula.
Step 5
The sugar will first form clumps and then melt into a light golden-coloured liquid. This will take around eight minutes.Be very careful not to allow your caramel to burn at this stage.
Step 6
Once there are no clumps of sugar and it is completely liquid, take it off the heat. Pour this caramel over the oranges in the tin.
Step 7
Mix the batter for our original brownies, stirring the Terry's Chocolate Orange pieces into the batter at the end. Pour the batter over the caramelised oranges and level it with a spatula.
Step 8
Bake for 30-35 minutes, or until the sides of the brownies have set, but the centre is still wobbly.
Step 9
Allow to set completely and cool, then turn out onto a serving tray, peeling the parchment off to reveal the caramelised oranges. Cut into squares.
Step 10
Store brownies in an airtight container in the fridge for up to five days. These can be made in advance and frozen.
Step 11
Enjoy reheated or cold from the fridge.
