Ingredients
12 servings

1 cvegan butter
softened

¼ cunsweetened applesauce
or vegan egg replacer equivalent to 1 egg

1 cgranulated sugar

1 call purpose flour
if gluten free, add 1/2 tsp xanthan gum

½ ccorn meal

¼ ccorn flour
if using gluten free flour, 1/2 c instead

½ tspbaking powder

½ tspbaking soda

½ tspsalt

½ tspxantham gum

Instructions
Step 1
Preheat oven to 325 degrees and line several baking sheets with parchment paper.

Step 2
In a large bowl, beat the butter and sugar for 2-3 minutes on medium speed, until light and fluffy. Scrape bowl.


Step 3
Add remaining ingredients and mix on low until well blended.








Step 4
Drop dough by tablespoons onto cookie sheets, leaving several inches of space between cookies.
Step 5
Bake for 12-15 minutes, until edges are lightly browned.
