Instructions
Preheat oven to 350 degrees.
Step 1
Use parchment paper or a silpat mat to line a baking sheet.
Step 2
Cream butter & sugars in stand mixer until light & fluffy (2-3 min.). Scrape sides of bowl to make sure all is blended.
Step 3
Add eggs, corn syrup, & vanilla; beat until combined.
Step 4
Add in flour, cocoa, cornstarch, salt, & baking soda; mix until combined.
Step 5
Scoop out 20 equal cookie dough balls (1/4C each). Flatten each dough ball; place a marshmallow half in center of dough. Carefully, wrap cookie dough around marshmallow; roll it in your hands to seal it.
Step 6
Press chocolate chips & chopped almonds all over top of cookie dough ball. (Basically cover top & sides with as many chocolate chips & almond pieces as possible.)
Step 7
Bake (12 min.); cool on baking sheet (15 min.) Remove cookies to cooling rack.
