Simple Bolognese with Basil & Peas

Ingredients
4 servings
1 tspolive oil
1brown onion
finely chopped
3garlic cloves
finely chopped
1carrot
medium, finely chopped
2celery stalks
finely chopped
150gpork mince
150gbeef mince
salt
to taste
pepper
to taste
1 x 400gcrushed tomatoes
tin
700gtomato passata
1 cupspeas
frozen
0.25 bunchfresh basil
chopped
250gdried rigatoni pasta
or gluten-free
20gparmesan
finely grated
Instructions
Step 1
In a large heavy-based pot, heat oil over medium heat and fry onion, garlic, carrot and celery for around 5 minutes or until well softened. Add both minces and stir through, cooking until browned. Season with salt and pepper.
Step 2
Pour in crushed tomatoes and passata and bring to the boil, then simmer gently for around 20 minutes until sauce reduces (you can simmer longer if you have time to intensify the flavour).
Step 3
Add peas and basil to the sauce during last 5 minutes of cooking.
Step 4
Meanwhile, cook the pasta according to packet instructions until al dente. Drain the pasta, then return to pot and add ladlefuls of sauce to toss through until well combined.
Step 5
Divide into four bowls and serve with finely grated parmesan.
