FOR THE HERB BUTTER & LOBSTER:
1 stickunsalted butter
softened
1 tablespoonfresh tarragon
chopped

parsley
1 teaspoonfresh garlic
finely minced
0.5shallot
peeled and small diced
0.5juice of lemon
28 ouncelobster tails
cut in half longways
1 tablespoonolive oil
salt
to taste

to taste
2 tablespoonsunsalted butter

1 cupheavy cream
4 cupsbaby spinach
packed
8 ounceslobster meat
cooked
0.5juice of lemon
2 packagesFettuccini pasta

Instructions
Step 1
1. Preheat the broiler to medium.

2. Add the butter, herbs, garlic, shallot, lemon juice and

salt and pepper to a medium size bowl and mix until

completely combined. Set aside.
Step 5
3. Next, add the lobster tails cut side up and evenly
Step 6
drizzle the olive oil over the lobster meat.
Step 7
4. Gently season the lobster with salt and pepper.

5. Broil the lobster on medium for 8 to 10 minutes or

until the meat is opaque.

6. In a large frying pan over medium heat add in the

butter, garlic and shallots and cook for 2 to 3 minutes or

just until the garlic is lightly browned.

7. Add in the cream, spinach, lobster meat, lemon juice,

salt and pepper and simmer over low heat to keep warm.

8. Cook the pasta in a large pot of boiling salted water

for 2 to 3 minutes or until al dente.

9. Drain the pasta and add it to the pan with cream and

spinach. Toss the pasta.

10. Finish by brushing the cooked lobster tails with the

herb butter and serve alongside the pasta.
