Crumbl 🙀 Chocolate Cake Cookies with Chocolate Frosting

These CRUMBL inspired chocolate cake cookies are made with a thick chocolate cookie base then topped with a homemade chocolate amercian buttercream frosting.

Instructions

Preheat oven to 350°F

Step 1
Line baking sheet with parchment paper; set aside. In sm. cup, mix instant coffee & hot water together; set aside to cool.
Step 2
Cream cold cubed butter, brown sugar, & sugar together until light & creamy. Add egg, vanilla, & (cooled down) instant coffee; mix until combined.
Step 3
Sift in flour, cocoa powder, & baking soda; mix just until the dry mixture disappears. Fold in chocolate chips.
Step 4
Use lg. cookie scoop to scoop out 8 equally sized cookie dough balls; place on prepared baking sheet. Gently flatten to about ½”.

Bake (8-9 min.)

Cool on baking sheet (10 min.) before transferring to cooling rack. While cookies cool, make chocolate frosting:

In bowl, melt chocolate chips in micro. (in 30 sec. increments) until fully melted; set aside to cool to room temp.
Step 8
In mixer fitted with paddle attachment, cream butter, sifted powdered sugar, & cocoa powder on med. (3 min.), scraping side from time to time.
Step 9
Add melted chocolate; mix on high, scraping down sides from time to time. After 2-3 min., frosting will be smooth, & fluffy. Place frosting in piping bag with a Wilton 2D rosette tip. Pipe chocolate frosting on cooled cookies & enjoy!

Notes

Step 10
Store in airtight container in a single layer at room temp. (up for 2 days). They will last longer if stored in an airtight container in fridge (up to 7 days.)
Step 11
Remove from fridge & let return to room temp. before enjoying them so they soften back up.
