Creamy Zucchini Noodles

Spiralized zucchini noodles make a surprisingly satisfying pasta substitute. Serve them with a rich and creamy sauce made with basil and avocado.

Instructions

Step 1
Use a spiral slicer (or a julienne peeler or a regular vegetable peeler) to make long, thin strips of zucchini that resemble spaghetti.
Step 2
To make the sauce, combine avocado, basil, lemon juice, garlic, black pepper, coconut aminos and water in a food processor or high-powered blender and process until smooth and creamy. Add additional water if needed to adjust consistency.
Step 3
Toss the uncooked (or lightly steamed) zucchini noodles with the sauce. Top with lemon zest.
Step 4
Note: Bean pasta may be substituted for the zucchini.
